RECIPE: Tomato Cucumber Salad

This salad can be made in two simple steps:
- Combine all dressing ingredients
- Prepare all vegetables and toss with dressing
That is it!! Enjoy as a main dish or as a side with grilled chicken or steak. Let's begin:
The Dressing:
½ cup extra-virgin olive oil.
3 tablespoons vinegar of choice (balsamic vinegar, red wine vinegar, or your favorite infused vinegar)
2 medium cloves garlic, pressed or minced.
Juice of lemon or lime
¼ teaspoon fine sea salt, to taste.
Freshly ground black pepper, to taste.
Optional - choice of fresh herbs (oregano, basil, parsely, cilantro, dill)
The Veggies:
4 Cups tomatoes chopped (I like to use a mix of cherry, grape, and vine ripe in nice big chunks)
1 English Cucumber, sliced
1 Medium Red Onion, sliced
Optional Add Ins:
1/2 Cup Feta cheese crumbled
1 Avocado, peeled, pitted, and cubed
